Bright garnet in colour, perfumed spice, mace, a mix of wild berries and ripe cherries characteristics. The palate is full flavoured with textured tannins finishing with freshness and focus.
Vineyard Information:
The Oliveto vineyard is nestled in the foothills of the Sellicks Ranges which buffer the southern end of the Vale. This vineyard has a gentle north western aspect which allows for warm days and afternoon cooling by the gully winds and sea-breeze. This unique site is perfect for slowly ripening Mataro. The soils are very free draining but have enough iron stone and organic content to ensure good tannin and colour development.
Winemaking Notes:
Handpicked and sorted, destemmed with 10% whole bunch clusters included. Cold soaked for 6 days at 8ºC and left to warm up naturally to begin fermentation. Hand plunged daily and pressed off after 20 days on skins. Matured for 8 months in seasoned oak hogsheads and then racked, blended and bottled. No finings or filtration were used.
