Crimson red colour, lifted spice and red cherry fruit aromas are underpinned by violets and hints of dried spring herbs. The palate is rounded and full bodied with a lovely silky texture and focused acidity. A modern style Shiraz with life and personality which will mature well for a further 10 years.
Two distinct sub-regional Shiraz Vineyards contribute to this blend. The Branson Road ‘Home Block’ vineyard located just off the coastline of Aldinga and the Wait Family vineyard on the top of the Seaview Rise in McLaren Vale. Each vineyard is hand manicured, low yielding and managed sustainably.
Handpicked and sorted, 90% destemmed with 10% whole bunch clusters. Cold soaked for 5 days at 8oC in open-topped fermenters. The fruit was left to naturally warm prior to starting fermentation. Hand plunged for 20 days before being pressed off straight to oak hogshead barrels for maturation on yeast lees. A combination of new French oak (40%) and seasoned oak barrels were used to mature the wine for 18 months prior to being blended and bottled. No finings and minimal filtration were used in the winemaking or bottling process.
