Deep crimson in colour, perfumed red-cherry, spice and blackcurrant aromas. A medium to full bodied wine with excellent mid palate flesh and richness. A classic McLaren Vale Cabernet Sauvignon, typically approachable upon release but with the structure and balance to mature well for at least another 7-10 years.
From the San Remo Vineyard perched at the very top of the Seaview sub-region of McLaren Vale, this vineyard has a history of producing outstanding Cabernet Sauvignon. Grown on protected east-westerly orientated rows ensures a slow ripening and lengthy ‘hang-time’, both so critical for premium Cabernet Sauvignon.
Handpicked and sorted, 100% destemmed and cold soaked for 5 days at 8oC in open-topped fermenters. The fruit was allowed to naturally warm prior to starting fermentation and then hand plunged for 18 days before being pressed off to oak barrels for maturation. Matured for 12 months in only seasoned French oak barrels, no new oak ensured a very fruit driven and energetic wine style. Post blending the wine was naturally clarified and bottled without finings or filtration.
