Seductive Black Forest cake and spicy kirsch aromas, support a rich, fleshy medium to full bodied wine, hallmarks of Nero d’Avola.
Nero d’Avola (Black of Avola) a native grape variety to Southern Italy, also thrives on the McLaren Vale coast on a sundrenched site in sandy soils. Premium grapes were sourced from our Zerella Family Vineyards in McLaren Vale from a vineyard that sits at an altitude of 44 mtrs above sea level. Nero d’Avola was grafted to 2.64 acres of Merlot in 2011 and all fruit was hand harvested.
Hand harvested at optimum ripeness, destemmed and not curshed. Approximately 10% whole bunch clusters were included into the fermenter. Cold soaked for three days prior to warming naturally to gegin fermentation. Hand plunged twice daily to ensure a gentle extraction of colour and tannin. After 20 days on skins and at sugar dryness the fermentation was pressed off to 25% new French and seasoned oak hogshead barrels. The wine was matured unhindered for 15 months before being racked and blended. A natural clarification occurred before the wine was bottled without finings or filtration.
